Although we call for unsalted butter on our oatmeal cookie mix, using coconut oil gives a better texture, longer keeping qualities and a coconut flavour. If the kitchen is warm or it’s summertime, room temperature coconut oil is fine; if it’s cold or wintertime, melt over low heat.

How to make

Ingredients

  • 1/2 cup (125 mL)Sweetened shredded coconut
  • Half 900 g-pkgPC®Oatmeal Cookie Mix (about 3 cups/750 mL)
  • 1/2 cup (125 mL)PC®100% Virgin Cold-Pressed Coconut Oil, softened or melted

How to make

  • Step 1Preheat oven to 350°F (180°C).
  • Step 2Place coconut on rimmed baking sheet. Bake in centre of oven for 7 to 9 minutes or until golden brown. Let cool completely.
  • Step 3Carefully arrange oven racks in bottom and top thirds of oven. Increase oven temperature to 375°F (190°C). Line two baking sheets with parchment paper.
  • Step 4Stir together baking mix, oil and 3 tbsp (45 mL) water in bowl with wooden spoon until soft dough forms. Stir in coconut. Shape heaping tablespoonsful (15 mL) into balls. Arrange on prepared baking sheets placing 2 inches (5 cm) apart. Flatten slightly.
  • Step 5Bake for 10 to 13 minutes, switching baking sheets top to bottom halfway, or until golden brown. Let cool on baking sheet.
