“Tartine” is the French term for buttered bread, describing this elegant open-faced sandwich with simplicity. Traditional iterations typically consisted of spreadable toppings (think jams and preserves), but more modern interpretations now include an array of elevated ingredients. In this recipe, we’ve brushed the bread with roasted olive oil, then topped it with paper-thin slices of prosciutto, rich blue cheese and sweet figs. Drizzle the plated tartines with additional olive oil, if desired.

How to make

Ingredients

  • 4 slices (1/2 inch/1 cm thick)Crusty French bread
  • 2 tbsp (25 mL)Olive oil
  • 4 slicesPC Splendido Prosciutto
  • Half pkg (200 g pkg)Gorgonzola Dolce Soft Blue-Veined Cheese
  • 4 piecesSoft Dried Fruit
  • 1 cup (250 mL)Baby arugula
  • Pinch (0.5 mL)Each salt and black pepper

How to make

  • Step 1Arrange 1 rack in top third of oven; preheat broiler to high.
  • Step 2Brush both sides of bread with 4 tsp of the oil; arrange on baking sheet. Broil, turning once, until toasted, about 4 minutes. Let cool slightly.
  • Step 3Arrange prosciutto over bread, dividing evenly and overlapping prosciutto to fit. Top with cheese and figs, dividing evenly. Broil until cheese is melted and bubbling, 2 to 3 minutes. Let cool slightly.
  • Step 4Toss together arugula, remaining oil and the salt and pepper in bowl.
  • Step 5Arrange tartines on serving platter; top with arugula, dividing evenly.
