PC®New World EVOO Extra Virgin Olive Oil1 tbsp (15 mL)
Thinly sliced garlic1/2 cup (125 mL)
Thinly sliced shallots1/4 cup (50 mL)
Chopped fresh parsley, tarragon, basil, mint and/or chives1 tsp (5 mL)
Salt1/4 tsp (1 mL)
Freshly ground black pepper2 tbsp (25 mL)
Fresh lemon juice1-1/2 cups (375 mL)

How to make
- Step 1
Bring 16 cups (4 L) water to a rapid boil in large saucepan. Add pasta. Stir occasionally until water returns to a boil. Cook, stirring occasionally, until tender but firm, 14 to 16 minutes. Drain, reserving 1 cup (250 mL) cooking liquid.
- Step 2
Heat oil in large skillet over medium-high heat. Add garlic; cook, stirring, 1 minute. Add shallots; cook, stirring, 2 minutes. Add reserved pasta cooking liquid; bring to a boil. Stir in herbs, salt, pepper and lemon juice. Stir in pasta and frozen peas; cook, stirring frequently, 2 minutes.
- Step 3
Divide among serving plates; top with goat cheese.
