Ingredients
1 tbsp (15 mL)
PC®Splendido Extra Virgin Olive Oil - Cold Pressed2
Onions, finely chopped3 stalks
Celery, finely chopped1 bottle (1.89 L)
PC®8 Vegetable Cocktail1 can (540 mL)
Bella Tavola White Kidney Beans, rinsed and drained2 cups (500 mL)
Whole Wheat Rotini1/2 tsp (2 mL)
Freshly ground black pepper1 pkg (142 g)

How to make
- Step 1
In large saucepan, heat oil over medium-high heat; cook onion and celery for 8 minutes or until vegetables are soft. Stir in vegetable cocktail and 3 cups (750 mL) water. Bring to a boil. Stir in beans and pasta. Reduce heat to medium-high. Cook uncovered for 10 minutes or until pasta is tender.
- Step 2
Remove from heat. Stir in pepper and spinach. Serve immediately.
