Our colcannon serves a crowd and makes a perfect accompaniment to our PC Vermont Ham. This traditional Irish side dish is more commonly made by folding cabbage into mashed potatoes, but we’re ready for the fresh spring green of leeks.

How to make

Ingredients

  • 5 lb (2.25 kg) Medium yellow-flesh potatoes, peeled and quartered
  • 6 tbsp (90 mL) Unsalted butter
  • 6 cups (1.5 L)Thinly sliced leeks, white and pale green parts only (about 2 medium leeks)
  • 2 cups (500 mL) 2% milk
  • 2 tsp (10 mL) Salt
  • 1/2 tsp (2 mL)Freshly ground black pepper
  • 10 slices PC® Naturally Smoked Dry Cured Double Smoked Thick Cut Bacon, slices

How to make

  • Step 1 Place potatoes in large saucepan; cover with cold water until water is 2-inches (5 cm) above potatoes. Bring to a boil over medium-high heat. Cook for 20 to 25 minutes or until potatoes are very tender; drain and return to saucepan.
  • Step 2Meanwhile, melt 3 tbsp (45 mL) of the butter in another saucepan over medium heat. Stir in leeks; cover and cook, stirring occasionally, for 4 to 5 minutes or until tender. Stir in milk, remaining 3 tbsp (45 mL) butter, salt and pepper; bring to simmer for 1 minute.
  • Step 3Mash potatoes using potato masher. Fold in leek mixture and bacon using a rubber spatula until combined. Transfer to serving dish.
