Ingredients
- 1-1/2 cups (375 mL) PC®Blue Menu®Chicken Broth
- Half 250-g pkg Cream cheese, cubed
- 2 cups (500 mL) Shredded PC®Club Pack Medium Cheddar Cheese shredded
- 1/4 tsp (1 mL)Freshly ground black pepper
- 1 pkg (340 g) PC®Gluten-Free Macaroni Pasta
How to make
- Step 1In large saucepan, heat broth covered over medium heat until it comes to a simmer, about 2 to 3 minutes. Uncover. Add cream cheese; cook, whisking, until it melts, about 3 to 4 minutes. Whisk in Cheddar and pepper until cheese is melted, about 1 minute. Reduce heat to low to keep warm.
- Step 2In large pot, bring 16 cups (4 L) salted water to a rapid boil. Add macaroni, stirring occasionally until water returns to a boil. Cook for 3 to 3-1/2 minutes, stirring occasionally, or until “al dente” or tender but firm. Drain well. Add to cheese sauce. Stir until well-coated, about 2 minutes. Serve immediately, garnished with chopped fresh parsley, if desired.
