Ingredients
- 1 tbsp (15 mL)PC® Splendido Extra Virgin Olive Oil - Cold Pressed
- 1/2 cup (125 mL)Diced red onion
- 2Carrots, diced
- 2Stalks celery, diced
- 1Sweet red pepper, diced
- 1/4 tsp (1 mL)Each of salt & freshly ground black pepper
- 2 cans (540 mL) (each 19 oz/540 mL) No Name Lentils, rinsed and drained
- 1/2 cup (125 mL) PC® Mediterranean Vinaigrette
- 1/2 cup (125 mL) Chopped fresh parsley
How to make
- Step 1In large saucepan, heat oil over medium-high heat; cook onions, carrots, celery, red peppers, salt and pepper for 5 minutes, stirring occasionally, or until soft. Stir in lentils;cook until heated through. Remove pan from heat. Stir in vinaigrette and parsley. Serve warm or at room temperature.
