PC Red Enchilada Sauce

Made with poblano peppers. Fill your tortillas with shredded cheese and cooked chicken, beef, vegetables or beans. Roll up and place in 8-inch (2 L) square baking dish. Pour sauce over top and sprinkle with shredded cheese. Cover loosely with foil and bake at 375°F (190°C) 30 minutes, removing foil after 20 minutes.
