“My favourite memories growing up were watching my mother prepping for holiday parties,” says PC® Test Kitchen Chef and sommelier Carrie Rau, which inspired her to create this throwback to the rum punch bowl that dominated just about every party in the ‘70s. Rau called on PC® Jamaican Style Ginger Beer – now in cocktail-convenient mini cans – to give the drink a warming winter feel.

How to make

Ingredients

  • 1/4 cup (60 mL)pineapple juice
  • 2 tbsp (30 mL)spiced rum (1 oz)
  • 2 tsp (10 mL)syrup from PC® Black Label Amarena Cherries in Flavoured Syrup, plus 2 cherries, divided
  • 1 can (222 mL)PC® Jamaican Style Ginger Beer, chilled
  • 1wedge fresh pineapple (optional)

How to make

  • Step 1Fill cocktail shaker halfway with ice. Add pineapple juice, rum and cherry syrup. Close lid and shake vigorously until the outside of the shaker feels cold, about 20 seconds.
  • Step 2Pour into stemless wine glass or cocktail glass over ice. Top with ginger beer. Garnish with cherries and pineapple wedge (if using).
  • Try this: Leave out the rum for a refreshing mocktail.
