Somewhere between a pancake and Yorkshire pudding lies the Dutch Baby, a skillet-sized popover that easily transitions from sweet to savoury depending on what you top it with. Here, we’ve kept it savoury with a sprinkling of smoky Cheddar, salty Parmesan, and chives. As for the toppings, we’ll leave that to you: Try topping the baked Dutch Baby with a simple spinach salad, or go all-out with smoked salmon and crème fraiche, or sliced black forest ham and avocado.

How to make

Ingredients

  • 1-1/4 cups (310 mL)all-purpose flour
  • 1/2 tsp (2 mL)each salt and black pepper
  • 6large eggs
  • 1-1/4 cups (310 mL)homogenized milk (3.25%)
  • 1/4 cup (60 mL)thinly sliced fresh chives
  • 1/4 cup (60 mL)butter
  • 3/4 cup (188 mL)shredded PC® Smoke-Flavoured Cheddar Cheese
  • 1/4 cup (60 mL)grated Parmesan cheese

How to make

  • Step 1Preheat oven to 425ºF (220°C).
  • Step 2Whisk together flour, salt, and pepper in large bowl; set aside. Whisk eggs with milk in separate bowl. Slowly whisk egg mixture into flour mixture until just a few small lumps remain. Whisk in half of the chives. Do not overmix batter.
  • Step 3Heat PC 3.5-Qt Enameled Cast Iron Braiser or large ovenproof skillet over medium-high heat. Add butter, swirling to melt and coat bottom. Whisk batter again and scrape into braiser. Sprinkle with Cheddar and Parmesan cheeses. Transfer to oven. Bake uncovered until puffed and edges are golden brown, 20 to 25 minutes. (It will begin to deflate as soon as it comes out of oven).
  • Step 4Cut into wedges. Sprinkle with remaining chives.
  • Try this: To make a sweet Dutch Baby, omit the chives and cheeses and add a sprinkling of sugar to the batter. Serve warm with fresh berries or sliced fruit, maple syrup, and a dusting of icing sugar.
