Originally made with fresh milk curdled by the addition of vinegar and sweetened with sugar, syllabub is a traditional English dessert that is more appealingly made nowadays with sweetened whipped cream. Many flavours are possible; lemon is refreshing and gives it a lightness that counteracts the cream. Cookie crumbs are not traditional but are definitely fun!

How to make

Ingredients

  • 2 tsp (10 mL)Grated lemon rind
  • 1/4 cup (50 mL)Fresh lemon juice
  • 1/2 cup (125 mL)Icing sugar
  • 2 cups (500 mL)35% whipping cream
  • 1-1/4 cups (300 mL)PC® "Eat The Middle First" Cookies, crumbled

How to make

  • Step 1Beat together lemon rind, lemon juice and icing sugar in bowl using electric beaters. Slowly pour in cream while beating; continue to beat until firm peaks form, about 4 minutes. Cover with plastic wrap; refrigerate for 1 hour.
  • Step 2Spoon 1 tbsp (15 mL) cookie crumbs into each of 10 small bowls or ramekins; top each with a mound of syllabub. Sprinkle another 1 tbsp (15 mL) cookie crumbs over top. Garnish with additional grated lemon rind and sprig of mint, if desired.
