How to make
Ingredients
- 2 tsp (10 mL)Grated lemon rind
- 1/4 cup (50 mL)Fresh lemon juice
- 1/2 cup (125 mL)Icing sugar
- 2 cups (500 mL)35% whipping cream
- 1-1/4 cups (300 mL)PC® "Eat The Middle First" Cookies, crumbled
How to make
- Step 1Beat together lemon rind, lemon juice and icing sugar in bowl using electric beaters. Slowly pour in cream while beating; continue to beat until firm peaks form, about 4 minutes. Cover with plastic wrap; refrigerate for 1 hour.
- Step 2Spoon 1 tbsp (15 mL) cookie crumbs into each of 10 small bowls or ramekins; top each with a mound of syllabub. Sprinkle another 1 tbsp (15 mL) cookie crumbs over top. Garnish with additional grated lemon rind and sprig of mint, if desired.
