How to make
1 tbsp (15 mL)2% milk
1/4 tsp (1 mL)Each salt and freshly ground black pepper
1 tbsp (15 mL)PC®Black Label Normandy Style Unsalted Cultured Butter
1/4 cup (50 mL)PC®Black Label Jura Montagne Hard Ripened Cheese Aged 10 Months
1 tsp (5 mL)Each chopped fresh chives and parsley
How to make
- Step 1
Lightly beat eggs with fork in small bowl until yolks and whites are combined. Beat in milk, salt, pepper and half of the butter.
- Step 2
Heat 8 to 10-inch (20 to 25 cm) nonstick frying pan over medium heat. Add remaining butter; let melt partially. Pour in egg mixture and stir with fork or spatula for 20 to 30 seconds or until eggs just start to look set. Stop stirring; cook for 1 to 2 minutes, tilting pan and gently lifting edges with spatula to allow uncooked egg to flow underneath. Eggs should look moist; if eggs are brown, they have been cooked too long or over too high heat. Remove pan from heat. Sprinkle evenly with cheese, chives and parsley.
- Step 3
Use spatula to fold one-third of omelette over the filling. Tilt frying pan at an angle with the folded side toward a plate. Fold other third of omelette over the filling and gently slide omelette onto plate.
