Ingredients

    Large shallot, halved lengthwise and thinly sliced
  • 1/4 cup (50 mL)

    PC®Black Label White Peach Condiment
  • 1/3 cup (75 mL)

    PC®New World EVOO Extra Virgin Olive Oil
  • 2 tsp (10 mL)

    PC®Whole Grain Dijon Prepared Mustard
  • 1/2 tsp (2 mL)

    Salt
  • 1/4 tsp (1 mL

    Freshly ground black pepper
  • 1

    Bulb fennel, trimmed, cored and thinly sliced
  • 6 cups (1.5 L)

    Torn frisée lettuce
  • 1/2 cup (125 mL)

    Roasted unsalted hazelnuts, roughly chopped
  • 1/3 cup (75 mL)

    PC®Tart Montmorency Cherries Whole Sweetened Dried Fruit, roughly chopped
  • 1 pkg (140 g)

    PC®Soft Unripened Goat's Milk Cheese, crumbled

How to make

  • Step 1

    Combine shallot and white peach condiment in large bowl. Let stand 10 minutes. Whisk in oil, mustard, salt and pepper until well combined.

  • Step 2

    Add fennel, frisée and half each of the hazelnuts and cherries; toss gently to coat.

  • Step 3

    Transfer half of the fennel mixture to shallow serving dish; sprinkle with half of the goat’s cheese. Top with remaining fennel mixture, hazelnuts, cherries and goat’s cheese.
