How to make

Ingredients

  • 1 tbsp (15 mL)  PC®Splendido Extra Virgin Olive Oil - Cold Pressed
  • Onions, finely chopped
  • 3 stalks Celery, finely chopped
  • 1 bottle (1.89 L)PC®8 Vegetable Cocktail
  • 1 can (540 mL) Bella Tavola White Kidney Beans, rinsed and drained
  • 2 cups (500 mL)  Whole Wheat Rotini
  • 1/2 tsp (2 mL)  Freshly ground black pepper
  • 1 pkg (142 g) PC®Organics Baby Spinach

How to make

  • Step 1In large saucepan, heat oil over medium-high heat; cook onion and celery for 8 minutes or until vegetables are soft. Stir in vegetable cocktail and 3 cups (750 mL) water. Bring to a boil. Stir in beans and pasta. Reduce heat to medium-high. Cook uncovered for 10 minutes or until pasta is tender.
  • Step 2Remove from heat. Stir in pepper and spinach. Serve immediately.
