Lacinato kale is also called black or Tuscan kale. The leaves are longer, thinner and darker than regular curly kale. Use a coffee grinder to grind the chia seed; ground chia seed thickens the vinaigrette, making it almost creamy.

How to make

Ingredients

  • 2 tbsp (25 mL)PC® Organics Black Chia Seed
  • 1/2 tsp (2 mL)Salt
  • 1/2 cup (125 mL)PC® New World EVOO Extra Virgin Olive Oil
  • 1/3 cup (75 mL)Fresh lemon juice
  • 2Bunches lacinato kale (about 600 g), washed and spun dry
  • 1 can (540 mL) PC® Blue Menu® Chickpeas
  • 1 cup (250 mL)Halved grape tomatoes
  • 1/4 cup (50 mL)Finely chopped fresh chives
  • 2 tbsp (25 mL)PC® Organics Black Chia Seed

How to make

  • Step 1Whisk together ground chia seed, salt, olive oil and lemon juice in small bowl. Let stand for 5 minutes.
  • Step 2Remove and discard stems from kale leaves. Tear leaves into bite-size pieces. Place in large bowl. Pour dressing over kale; massage into leaves for 1 minute to soften them.
  • Step 3Add chickpeas, tomatoes and chives to bowl; toss to combine. Serve garnished with whole chia seed.
