A shrub is a cocktail that was popular in the British colonies of 1700s America, made by mixing a vinegared syrup with alcohol and plain or carbonated water. Berries, basil and balsamic vinegar give it a refreshing reboot.

How to make

Ingredients

  • 1 cup (250 mL)Granulated sugar
  • 1/2 cup (125 mL)Each fresh blackberries and blueberries
  • 1/3 cup (75 mL)Gin
  • 1/4 cup (50 mL)PC®Organics Balsamic Vinegar of Modena
  • 4Large fresh basil leaves
  • PinchSalt
  • 3-1/2 cups (875 mL)Ice cubes
  • 2 cups (500 mL)Carbonated mineral water

How to make

  • Step 1Combine sugar and 1 cup (250 mL) water in small saucepan. Bring to a boil over medium-high heat; boil for about 1 minute or until sugar is completely dissolved. Remove from heat; pour into glass bowl. Place bowl on top of another ice-filled bowl to cool.
  • Step 2Place blackberries and blueberries in pitcher. Using wooden spoon, muddle together until most of berries are mashed. Stir in gin, vinegar, 1/3 cup (75 mL) cooled sugar syrup, basil leaves and salt. Stir in ice then mineral water.
  • Step 3Pour into chilled glasses to serve, spooning in macerated berries. Garnish with additional basil leaves, if desired.
