Bacon is tucked between each layer of these sticky cinnamon buns; you’ll also taste it in the cream cheese icing, as we’ve swapped out some of the butter in the icing for bacon fat. Bonus: The dough doesn’t need to rise, so you can whip these up in just an hour.

How to make

Ingredients

  • 1/2 cup (125 mL)PC® Unsalted Country Churned Butter
  • 10 slicesPC® Bacon
  • 1/2 cup (125 mL)Packed brown sugar
  • 1 tsp (5 mL)Cinnamon
  • 2-1/2 cups (625 mL)All-purpose flour
  • 2 tbsp (25 mL)Granulated sugar
  • 1-1/2 tsp (7 mL)Baking powder
  • 1/2 tsp (2 mL)Each baking soda and salt
  • 1-1/4 cups (300 mL)Buttermilk
  • Half pkg (250 g pkg)Cream cheese, softened
  • 1 cup (250 mL)Icing sugar
  • 2 tbsp (25 mL)PC® Unsalted Country Churned Butter
  • 1/2 tsp (2 mL)PC® Pure Vanilla Extract

How to make

  • Step 1Prepare Rolls: Freeze 1/3 cup butter until firm.
  • Step 2Meanwhile, place bacon in cold large skillet. Cook over medium heat, turning often, until golden and crispy, 5 to 6 minutes. Transfer bacon with tongs to paper towel-lined cutting board to drain; discard paper towel. Transfer 2 slices to small plate; set aside. Finely chop remaining bacon. Stir together chopped bacon, brown sugar and cinnamon in large bowl; set aside. Transfer 2 tbsp bacon fat to small bowl; refrigerate until needed.
  • Step 3Preheat oven to 400°F (200°C). Whisk together flour, granulated sugar, baking powder, baking soda and salt in separate large bowl. Grate frozen butter on large holes of box grater into flour mixture. Gently lift and toss mixture with fingers to coat butter. Make well in centre; pour in buttermilk. Stir with fork just until ragged dough forms.
  • Step 4Turn out dough onto well-floured work surface. Knead gently until smooth but still slightly sticky, sprinkling with flour if necessary. Roll out dough to 15- x 12-inch (38 x 30 cm) rectangle.
  • Step 5Melt remaining butter; let cool slightly. Brush surface of dough with 2 tbsp melted butter; sprinkle bacon-brown sugar mixture evenly over top. Beginning at 1 long side, tightly roll up dough to make log, pinching seam to seal. Cut crosswise into 12 equal lengths. Arrange, cut sides up, in greased 12-count muffin tin. Brush tops with remaining melted butter.
  • Step 6Bake until golden brown, about 20 minutes. Let cool in pan 10 minutes; transfer directly to rack to cool slightly.
  • Step 7Meanwhile, prepare Icing: Beat together cream cheese, icing sugar, butter, vanilla and reserved 2 tbsp bacon fat in separate large bowl with electric hand mixer until smooth.
  • Step 8Spread icing over top of rolls, dividing evenly. Cut each slice of reserved bacon into 6 equal lengths; top rolls with bacon, dividing evenly.
