Instead of the usual buttermilk in your pancakes, try our new kefir. It delivers the same tang as buttermilk with the added benefits of fermentation. Leftover pancakes freeze well; simply pop them frozen into the toaster to heat.

How to make

Ingredients

  • 1-1/2 cups (375 mL)All-purpose flour
  • 1 tsp (5 mL)Baking powder
  • 1/2 tsp (2 mL) Baking soda
  • 4 tsp (20 mL)Granulated sugar
  • 1/4 tsp (1 mL)Salt
  • 1-1/2 cups (375 mL)PC® Plain Kéfir Probiotic Fermented 1% M.F. Milk
  • 1/3 cup (75 mL)2% milk
  • 2 tbsp (25 mL)Unsalted butter, melted
  • 1Large egg, lightly beaten
  • 3 tbsp (45 mL)Unsalted butter

How to make

  • Step 1Whisk together flour, baking powder, baking soda, sugar and salt in large bowl. Combined kefir, milk, melted butter and egg in another bowl. Stir kefir mixture into flour mixture with wooden spoon until combined; do not over mix.
  • Step 2Heat heavy frying pan over medium heat. Once hot, add one-quarter of the butter; melt. Using 3 tbsp (45 mL) batter per pancake, dollop four pancakes around the pan. Cook for 3 minutes or until edges are set and bubbles rise to the top; turn and cook 3 minutes or until golden and cooked through. Transfer to platter; cover to keep warm.
  • Step 3Repeat three more times for 16 small pancakes.
