A traditional Sicilian antipasto made with tender chopped eggplant, Leccino black olives and capers in tangy, rich tomato sauce with olive oil. Serve with appetizer platters alongside cured meats, cheeses and crusty bread. Also ideal for stirring into pasta dishes and spooning on grilled or roasted fish, chicken or pork.
